6 Great Ways of Cooking Cod Fish

Last Updated: 10.08.20

Cod is a common name attributed to a larger variety of fish usually belonging to the family Gadidae, but other species are also included. Usually, you will find Atlantic and Pacific cod in the stores and this is the one most commonly used for cooking. With a mild flavor, dense white flesh rich in omega-3 fatty acids and a liver rich in oil, the fish can be cooked in numerous ways – find out which are some of these by reading the list featured below.

Baked Cod with Lemon and Parsley

Like many other breeds of fish, cod can be prepared in many different ways. The most popular include frying, baking or grilling the fish fillets, serving the portions with specific garnishing. We begin our list with a healthy and delicious baked cod dish, that is relatively easy to cook and it was appreciated by many for the unique flavor and taste.

The ingredients required are not too hard to find: you will need 4 cod fillets, each weighing in at about 6 ounces, a quarter teaspoon each of paprika and lemon-pepper seasoning, 2 spoons with minced parsley and 2 more with grated lemon peel, a quarter cup of flour, 3 tablespoons of lemon juice and 3 of butter, which is going to be melted further on.

Make sure to have two bowls at your disposal; in the first one, mix the melted butter with lemon juice, and in the second one add the seasonings and a quarter cup flour. Stir well until it turns into a homogeneous mixture, and all ingredients have been combined. After this, dip the fillets in the first bowl and dredge them through the second one, making sure to fully cover all sides.

You can shake off the excess if you want to. Place the codfish on a baking tray coated with a thin layer of oil or cooking spray. Pour the remaining lemon juice mixture over the fish fillets and then bake for about 15 minutes. Keep in mind that the oven should be preheated to 400 degrees before starting to cook the meat. The lemon peel and parsley are to be sprayed over the fish before serving it with a garnishing of your choice.

Chipotle Cod Tacos

This recipe provides you with a great meal, perfect for a family dinner or for a quick lunch with friends or co-workers. It is easy to prepare, easy to eat and take away, and it is very tasty and healthy too. To begin with, preheat the oven to 392F; while waiting for it to reach that temperature, slice the cod into small chunks, each measuring about 2 centimeters. In a bowl, put 2 tablespoons of chipotle paste, lime juice (one small lime is enough for this) and olive oil. Marinate the fish chunks in this mixture and, while waiting, start preparing the slaw.

Mix together one bag of vegetables, 3 tablespoons of mayonnaise, 2 teaspoons of vinegar and one of wholegrain mustard. Stir until everything is mixed up, do not forget to season to your taste and you are basically done preparing the slaw. Put the marinated fish on a baking tray and roast for about 10 minutes or maybe more, until it is flaking apart.

About 5 minutes before the fish is done, introduce 4 taco shells in the oven so that they become warm and crispy by the time the cod has been removed. Lay them on a hard surface, fill the taco shells with cod and slaw (the remainder will be used for serving) and bend them to enclose the food.

Cod and chips

Even though this recipe has a fast-food vibe to it, it is certainly much more exquisite and tasty than what you get in an ordinary restaurant. It is served with coconut batter and tartare sauce, a combination that is appreciated by many people. However, it is not very easy to cook and it requires more ingredients than other recipes, but the result is surely worth the effort.

You will need mayonnaise, Greek yogurt, 3 medium sized cornichons, capers, dill and parsley for the tartare sauce, chips, peas and lemons for serving, while for the fish itself, apart from fillets, flour, 1 egg, coconut milk (about 150 milliliters of it), baking powder and oil.

If the fish has not been portioned already, cut it into four equal chunks. After seasoning them, drop approximately two teaspoons of the flour, with care to distribute as evenly as possible.

The remaining flour, together with one egg, coconut milk, and baking powder are to be mixed together in a separate bowl; stir until you obtain a smooth batter that is homogeneous; if it is too stiff, add more coconut milk to soften it.

Tartare sauce is made by simply mixing all the ingredients (mayonnaise, yogurt, cornichons, capers, dill, and parsley) in a separate bowl, set aside once the sauce is ready.

Pour some oil into a deep and large wok pan; heat it until it is at a temperature high enough to toast a piece of bread in less than 20 seconds. Fry the fish after dipping the chunks in the batter, and maintain on the heat source for about 3 minutes until it becomes crispy and the color changes to golden yellow.

To remove excess oil, leave them standing on a plate covered with paper towels. To keep them warm, you can let them stay in the oven with the heat settings kept as low as possible. Serving them can be done with chips, peas, lemon wedges and, of course, the tartare sauce.

Cod with Orange and Dill Crumb

An easier recipe that yields enough to serve you alone, the cod with orange and dill crumb is easy to cook and requires a limited amount of ingredients, making it ideal for a quick dinner after a long and tiresome day at work. The topping and fish have to be prepared separately, but they will then be cooked simultaneously.

The orange and dill crumbs are obtained by grating a slice of bread in a food processor. The breadcrumbs obtained are combined with orange zest, garlic, dill and seasoning to your liking.

Preheat the oven to 428F and place a large baking potato on a large spoon, cutting slits across it at about 5 millimeters distance between them. Bake it in the oven for 1 hour and 10 minutes or even more, if you think it is not done by then.

Once the potato is ready, place it on a tray with the cod fillets. Drizzle with oil and season to taste, topping the fish with crumbs. Bake in the preheated oven for 15 minutes, and once done, serve with steamed vegetables.

Fish finger sandwich

One of the main advantages of using cod to prepare a meal is that it offers a lot of versatility in terms of ways to cook it.

Children will surely enjoy the cold fingers, but if you want to cook this dish for them, keep in mind to make it less spicy. You will need a small pack of fajita seasoning, weighing in at about 30 grams, 50 grams of flour, 2 or 3 eggs already beaten, crusty bread rolls sliced in half, mayonnaise, bread crumbs (about 100 grams will do), and skinless cod fillet.

Cut the fillets in chunky fish fingers, small enough to fit the bread. Take 3 bowls and put them on a table; in the first one, mix the fajita seasoning with flour, salt, and pepper. In another one, put the beaten eggs and in the last the breadcrumbs. Line them up in this order.

Coat the fish fingers in the flour mixture, removing the excess, dip in the bowl with the egg and dredge through breadcrumbs until both sides are completely covered.

Do not leave areas of the fillets untouched, as it might spoil the taste. Cover the base of a large frying pan with oil, heating it thoroughly; while doing this, line a plate with paper towels and leave it near the stove. Fry the fingers for about 3 minutes, until they turn golden, and remove excess oil by leaving them on the plate. For serving them, take each bread roll and spread with mayonnaise, adding tomatoes gherkins and then the fish. You can also include lemon wedges.

 imple fish stew

Perhaps the easiest to cook of all the recipes mentioned above, the simple cod stew requires a reduced amount of time for cooking, and it is healthy and delicious.

You will need olive oil, fennel seeds, diced carrots, celery sticks and garlic cloves, 2 thinly sliced leeks, chopped tomatoes, skinless cod fillet, king prawns and 500 milliliters of hot fish stock.

In a large pan, heat the oil and add the fennel seeds and vegetables, cooking for 5 minutes until they start softening. Throw in the leeks, tomatoes, and stock, boiling for about 20 minutes until the sauce is thick and the vegetables turned tender. Add the fish to this mixture, put the prawns in and cook for two more minutes until the flesh is lightly cooked.  This is a delicious, fast and healthy dish that can be immediately prepared, without requiring any sophisticated ingredients or effort.
