Rice is easy to cook but there are a few tricks you should know before you start.

It needs to be washed very well before the cooking process starts. If not washed right, it will get smelly and it will spoil way faster than it should. Put it in a bowl, add cold water and swirl it until the water runs clear.

Cooking with rice is all about hydration. Wholegrain, glutinous and wild rice needs to be well soaked before preparing the dish. And Japanese short-grain rice should be soaked for about 30 minutes. Another good tip would be to add some garlic when you’re done with cooking it. It gives it a nice flavor.

The important thing is to drain it well, around 10-15 minutes.

Lentil rice with turmeric fish

Far from their bland reputation, lentils can add rich, nutty flavor to your meals.

Heat half of a tablespoon of olive oil in a large saucepan over medium heat. Add one brown onion, finely chopped, and 2 garlic cloves, crushed, and cook, stirring, for 5 minutes or until onion softens.

Add 1 cup (200g) basmati rice and stir to coat. Add 1 and a half cups (375ml) Massel vegetable liquid stock and 2 tablespoons lemon juice and bring to the boil. Reduce the heat to low and cook, covered, for 10 minutes or until all liquid is absorbed and the rice is tender. Add 100g green beans, chopped, and 400g can lentils, rinsed, drained, and use a fork to stir through. Set aside, covered, for 5 minutes.

Meanwhile, combine 1 and a half teaspoons of ground turmeric, 1 and a half teaspoons of ground cumin, a half teaspoon of chili flakes and a half tablespoon of olive oil in a large bowl. Season with salt and pepper. Add 8 (about 800g) white fish fillets (such as bream or whiting) and turn to coat in spice mixture.

Heat a sizeable non-stick frying pan over high heat. Add the fish fillets and cook for 1-2 minutes on each side or until just cooked through. After that just remove from the heat source.

Spoon the rice evenly on the serving plates. Top with fish and serve immediately with lemon wedges.
